Classic Gazpacho {in your blender}

My Papa Spuds box came with a recipe kit for the simplest Gazpacho I’ve ever seen and it was delicious! I didn’t take out the seeds of the cucumber or the tomatoes and didn’t add extra tomato juice or canned tomatoes like you’ll see in some recipes.  If you’re looking for something more elaborate, I recommend my Gazpacho with bacon and feta but this is perfect for a quick weeknight dinner or lunch.  Refrigerates well!

What to buy:

  • 3 medium sized tomatoes
  • 1 jalapeño with seeds removed
  • 1 large cucumber
  • 1 red bell pepper
  • 1/2 cup chopped fresh basil
  • 1/3 cup red wine vinegar
  • 1/4 cup olive oil

What to do:

  • cut vegetables into pieces and add to blender, puree until it reaches desired consistency.
  • sprinkle with salt and pepper to taste before serving
