Chocolate Chip Granola Snack Cups

My 3 year old loves to be in the kitchen with me and can “read” a recipe when it is broken down into pictures (I discovered this with Blue Apron recipe cards.) I found a kid’s cookbook Cooking Class at the library, with step-by-step pictures and one of the best recipes we’ve tried so far, is “grab and go granola bars” or what I’m calling chocolate chip granola snap cups.  We changed it up a bit to use a muffin tin and silicon muffin cups but left everything else the same. If you want to use a 9×13 pan instead, butter pan and press oat mixture down, cutting it into bars. Super simple, 6 ingredients and deemed “yum” by my 3 and 1 year olds!

What to buy:

  • 3 tablespoons butter
  • 1/3 cup packed light brown sugar
  • 1/4 cup honey
  • 1 teaspoon vanilla
  • 3 cups quick cooking oats
  • 1/4 cup chocolate chunks

What to do:

  • place silicon muffin cups in a 12 count muffin tin
  • melt butter in a pot over medium heat and add brown sugar, honey and vanilla, stirring to combine
  • turn off the heat and pour oats into pot, stirring well to combine
  • press oat mixture into muffin cups and top with chocolate chunks, pressing in well
  • refrigerate until chilled and pop out of muffin cups
