Meal Plan for the First Week of March

Crockpot-Cheesy-Buffalo-Chicken-Pasta-3I skipped meal planning last week as we got back into town late on Tuesday and then Joe had to be out of town the rest of the week.  We ate lots of mac n’ cheese, pizza and cobbled together meals of what we had in the fridge and pantry.  Back in the saddle this week (let’s hope!) and here’s what I’m planning:

Sunday: Roasted Chicken with Salad (recipe from the one and only Ina)

Monday: Balsamic Chicken in the Crockpot (planning to adapt this recipe for beef)

Tuesday: Cheesy Buffalo Chicken Pasta in the Crockpot 

Wednesday: Pan-Seared Flat Iron Steak with Cauliflower Rice & Balsamic Glaze

Thursday: Mandarin Orange Pork Chow Mein Stir-Fry

Friday: Pan-Roasted Chicken Panzanella with Arugula & Beets

Saturday: Grilled Sausage with Roasted Bell Peppers
