Green Pea and Mint Couscous

I’ll admit this is a summery dish but it was exactly what I wanted last night and my mint plant is still going strong.   We ate this as a side dish to one of my favorites, Sriracha Salmon, but it would be great if you picked up a rotisserie chicken for a fast, delicious dinner. Don’t leave out the lemon as it adds the needed acidity and brightness to the dish.

What to buy (serves 2-3):

  • 1 cup water
  • 1/2 teaspoon salt
  • 1 cup frozen peas
  • 1 cup couscous
  • 2 tablespoons fresh mint leaves, chopped
  • 2 tablespoons fresh lemon juice
  • 1 tablespoon olive oil
  • 1/2 cup almonds, thinly sliced
  • 1/2 cup golden raisins
  • 1/2 teaspoon pepper
  • grated parmesan, to taste

What to do:

  • in a small saucepan bring water to a boil with salt
  • add peas and return water to a boil
  • stir in couscous, remove from heat and cover pan Immediately
  • let couscous stand, covered, 5 minutes
  • fluff couscous with a fork and stir in mint, lemon juice, olive oil, almonds, raisins and salt and pepper to taste
