Ginger Snow Peas

This is a simple, fragrant way to cook one of my favorite spring vegetables, the lovely snow pea.  I served this alongside tabbouleh with roasted tomatoes and pan seared cod for a light, fresh and delicious spring dinner. DSC_0464

What to buy (serves 2):

  • 1 tablespoon olive oil
  • 1 small red onion, diced
  • 1 tablespoon finely chopped peeled fresh ginger
  • 2 clove garlic, minced
  • 1/2 pound sugar snap peas, trimmed
  • 1/2 teaspoon cumin seeds
  • 1/2 teaspoon sesame seeds
  • 1/2 teaspoon fennel seeds
  • 1/2 cup water

What to do:

  • heat oil in a large pan medium heat until hot then sauté onion, ginger, and garlic, stirring for about a minute
  • add peas and sauté, stirring, 2 minutes
  • add water and seeds, simmer, stirring occasionally, until peas are crisp-tender, about 2 minutes
  • season with salt and pepper and serve hot
