Beef Pot Roast {in Your Crockpot}

This is a super simple crockpot recipe that yields a delicious result every time.  You want to use a cheaper cut of tougher beef like chuck or round roast.  You don’t need much liquid in your crockpot to start as the meat and veggies will make enough moisture as they cook.  Set it up in the morning and come home to a house that smells incredible and enjoy meltingly tender meat for dinner!DSC_0443What to buy (serves 2-3):

  • 1 tablespoon cornstarch
  • 2 carrots, cut into 1 inch pieces
  • 1 large yellow onion, cut into small wedges
  • salt and pepper, to taste
  • 1 beef chuck roast (1 1/2 pounds), trimmed of excess fat
  • 1 tablespoon Worcestershire sauce

What to do:

  • in slow cooker, stir together cornstarch and 2 tablespoons cold water until combined
  • add carrots and onions; season with salt and pepper, and toss
  • sprinkle beef with salt and pepper; place on top of vegetables, and drizzle with Worcestershire
  • cover; cook on high, 5 hours (or on low, 10 hours)
  • transfer roast to a cutting board; thinly slice against the grain
  • serve hot with vegetables and a spoonful (or four) of juices from the crockpot
