Grilled Pineapple

Number twelve in my Thirty for July Fourth cooking project is simple and delicious: grilled pineapple.  I love pineapple on it’s own but had been wanting to try it on the grill and we finally did this weekend. Grilling caramelizes the sugars and the pineapple somehow becomes even juicier.  It’s quick and easy, the perfect dessert or side dish for the Fourth of July, maybe with some ice cream on the side.

We enjoyed ours with grilled BBQ pork tenderloin.

What to buy:

  • 1 whole pineapple

What to do:

  • trim, core and peel pineapple
  • cut into wedges
  • preheat grill
  • place pineapple wedges on the grill and cook approximately 4 minutes on each side (turning so that grill marks are on all sides) until the pineapple becomes fragrant
  • serve hot
