Roasted Salmon with Green Herbs

I love having an herb garden and I’m trying to use herbs in as many recipes as I can.  Today’s recipe was inspired by  this one from the Barefoot Contessa.  She uses fresh dill, parsley, scallions and white wine but I substituted basil, cilantro, and lemon juice.  It was a great, easy weeknight dinner and would also work well on the grill.

What to buy (serves 2):

  • 2 salmon fillets
  • salt and pepper
  • ¼ cup good olive oil
  • ¼ cup lemon juice
  • ½ cup fresh basil, minced
  • ½ cup  fresh parsley, minced
  • lemon wedges, for serving

What to do:

  • preheat the oven to 425
  • place the salmon fillet in an oven safe dish and season with salt and pepper
  • whisk together the olive oil and lemon juice and pour over the salmon
  • combine herbs and sprinkle over salmon
  • roast the salmon for 10 to 12 minutes, until almost cooked in the center at the thickest part
  • serve hot with lemon wedges.
