Cinnamon Sugar Pecans

My Mom is the best about always having great snacks like spiced or sugared nuts on hand to give friends or snack on between meals.  I’m taking a page out of her book with this recipe for Cinnamon Sugar Pecans that I’m packing this weekend as we head down to the Georgia coast to spend time with some of my friends from college.  I couldn’t be more excited to see this group and spend some time on the beach/in the pool in my awesome maternity tankini, sipping an O’Douls if things get crazy!  Hope y’all have great weekends and happy cooking!

What to buy:

  • 1/2 cup (1 stick) butter, melted
  • 3 large egg whites
  • 1 teaspoon vanilla
  • 1 cup sugar
  • 1 teaspoon ground cinnamon
  • 4 cups pecan halves

What to do:

  • preheat the oven to 350 degrees
  • line a large baking sheet with parchment or aluminum foil
  • mix egg whites, vanilla, sugar and cinnamon
  • add pecans, stirring to coat
  • spread pecans on baking sheet and pour melted butter on top
  •  bake for 25 to 30 minutes, stirring every 10 minutes
  • cool on the baking sheet for 10 to 15 minutes before serving
