Tomato Crostini with Basil and Parsley

This is an easy, fresh and summery appetizer that’s perfect to feed a crowd.  After I took this picture I popped the toasts back into the oven for a few minutes to melt the feta but I neglected to take a finished product picture before they were gobbled up.  I sprinkled half of the toasts with parsley and the other half with basil but you can use whatever fresh herbs you like! I’m so excited for summer tomatoes and eating outside!


What to buy:

  • 1/4 cup olive oil
  • 2 garlic cloves, minced
  • 1 French bread baguette, cut into 1/2 inch slices
  • 3 tablespoons lemon juice
  • 2 tablespoons olive oil
  • salt and pepper, to taste
  • 1 tomato, chopped
  • 1/3 cup crumbled feta cheese
  • 1/4 cup parsley, chopped
  • 1/4 cup basil, chopped

What to do:

  • preheat oven to 350 degrees
  • place bread slices on a baking sheet lined with foil and stir together 1/4 cup olive oil and garlic, brush on 1 side of each bread slice
  • bake bread for 10 to 12 minutes until lightly toasted
  • combine lemon juice, 2 tablespoons olive oil, salt, pepper and tomato
  • top each bread slice with about a tablespoon of tomato mixturee and sprinkle with feta
  • bake for another 8 to 10 minutes or until cheese begins to melt
  • sprinkle with herbs and serve hot
