Fiesta Chicken {in your Crockpot}

It’s a rainy and cold Monday where we are so I’m sharing a ridiculously easy crockpot recipe for Fiesta Chicken that you can put together in a few minutes for a warm, delicious dinner.   If you’re feeling more gourmet you could add chopped green chilies, minced fresh cilantro, 1 tablespoon lime juice and 2 garlic cloves, minced.  Personally, I thought it was delicious with six simple ingredients.  I served this over rice but you could serve in warm tortillas or on its own.  I hope you have a good Monday and come on Spring!

What to buy (serves 3-4):

  • 3 chicken breasts, frozen or thawed
  • 15 ounces black beans, drained and rinsed
  • 1 cup corn, fresh, canned or frozen
  • 1 jalapeño, seeded and sliced
  • 1 cup of your favorite salsa
  • 1 cup shredded Cheddar cheese

What to do:

  • add all ingredients to your crockpot and stir a bit
  • cook on low for about 4-5 hours or until chicken is no longer pink at all
  • once chicken is cooked, shred it with two forks and stir ingredients to combine
  • serve over rice or with tortillas
