This week, in preparation for the big game Sunday, I’m sharing some recipes that would be perfect for your Super Bowl feast. It may be a stretch to present a cauliflower dish as something you’d want to serve at a Super Bowl party but bear with me. This recipe has all the creamy, cheesy goodness of mac and cheese with cauliflower standing in for noodles. I used a spicy three pepper Colby Jack cheese but any kind you like would work. I neglected to take a picture of the finished recipe but I promise it was bubbling, golden and delicious.
- 1 large head cauliflower, cut into small florets
- 1 cup milk (I used 2%)
- 1/2 cup plain Greek yogurt
- 1 tablespoon butter
- 1 tablespoon Dijon mustard
- 1 1/2 cups spicy 3 pepper Colby Jack cheese, shredded
- 1/2 cup white cheddar, shredded for topping
- 2 cloves garlic, minced
- pepper and salt, to taste
What to do:
- preheat oven to 375 degrees
- steam cauliflower over a pot of boiling water until tender
- combine yogurt, butter, garlic, salt, pepper, mustard and Colby Jack cheese in a sauce pot over medium heat, stirring until smooth
- pour over the cauliflower, tossing to combine
- top with white cheddar and bake until browned and bubbly hot, about 20 minutes
