Cauliflower “Mac” and Cheese

This week, in preparation for the big game Sunday, I’m sharing some recipes that would be perfect for your Super Bowl feast. It may be a stretch to present a cauliflower dish as something you’d want to serve at a Super Bowl party but bear with me. This recipe has all the creamy, cheesy goodness of mac and cheese with cauliflower standing in for noodles. I used a spicy three pepper Colby Jack cheese but any kind you like would work.  I neglected to take a picture of the finished recipe but I promise it was bubbling, golden and delicious.

DSC_0174What to buy:

  • 1 large head cauliflower, cut into small florets
  • 1 cup milk (I used 2%)
  • 1/2 cup plain Greek yogurt
  • 1 tablespoon butter
  • 1 tablespoon Dijon mustard
  • 1 1/2 cups spicy 3 pepper Colby Jack cheese, shredded
  • 1/2 cup white cheddar, shredded for topping
  • 2 cloves garlic, minced
  • pepper and salt, to taste

What to do:

  • preheat oven to 375 degrees
  • steam cauliflower over a pot of boiling water until tender
  • combine yogurt, butter, garlic, salt, pepper, mustard and Colby Jack cheese in a sauce pot over medium heat, stirring until smooth
  • pour over the cauliflower, tossing to combine
  • top with white cheddar and bake until browned and bubbly hot, about 20 minutes
