Five Minute Chocolate Chip Peanut Butter Bars

I love this recipe because it is quick to throw together, easy to transport and packed with peanut butter and chocolate.   You can mix the batter in five minutes by hand and in one bowl. Don’t overbeat or over bake, and you’ll have bars with chewy edges and a dense, soft center.  I made these for Joe to take to work and as I was snapping a batter picture look whose nose appeared!


(If Joe’s colleagues are reading, I promise she didn’t get a lick.)

What to buy:

  • 1/2 cup unsalted butter, melted
  • 1 large egg
  • 3/4 cup light brown sugar, packed
  • 1/4 cup granulated sugar
  • 1/2 cup crunchy peanut butter
  • 1 cups all purpose flour
  • 1/2 teaspoon baking soda
  • 1 teaspoon corn starch
  • pinch salt
  • 12 ounces semi-sweet chocolate chips

What to do:

  • preheat oven to 350 degrees
  • butter or spray an 8 inch square baking pan
  • combine butter, egg, sugars, stirring for about 1 minute
  • stir in the peanut butter and add the flour, baking soda, cornstarch, salt and chocolate until mixed
  • spoon batter into pan, you may need to flatten it slightly with a spatula
  • bake for about 17- 20 minutes, or until center is just set and golden
  • don’t overcook, bars will firm as they cool
