Chicken, Greens and Rice Noodle Soup

Ever think to yourself, I should to eat more greens?  If so, I’ve got a noodle soup recipe packed with greens and delicate slippery rice noodle that you’ll love. I found these in my local grocery store in the Asian food aisle.    DSC_0315

but you could add other vegetables like carrots, celery and mushrooms.  I drizzled some sriracha on top to add a little heat.  This soup was hard to eat (we needed chopsticks) but well worth it and you’ll feel so virtuous slurping down your greens!

What to buy (serves 4):

  • 1-2 tablespoons olive oil
  • 1 box rice noodles, cooked and drained according to package instructions
  • 3 medium leeks light green parts halved and thinly sliced
  • 8 scallions, thinly sliced
  • 2 cloves garlic, minced
  • 3 handfuls of kale, chopped
  • 3 cups bok choy, sliced into 1-inch thick pieces (1-2 heads)
  • 8 cups chicken broth
  • 2 cups water
  • 3 chicken breasts, cut into bite-size pieces
  • 2 tablespooons ginger paste
  • 1 tablespoon parsley, finely chopped
  • 2 tablespoons soy sauce
  • salt and pepper, to taste
  • sriracha for drizzling, optional

What to do:

  • heat oil in a large stockpot over medium heat, add leeks, garlic and scallions to cook for 5-6 minutes
  • add broth and water on top of garlic mixture and bring to a boil
  • add the chicken and cook until cooked through, about 15 to 20 minutes
  • add ginger and soy sauce to the broth and reduce heat to low, simmer
  • add  bok choy and kale, cook until they are tender, about 5 minutes
  • divide the noodles evenly in bowls and then ladle in the soup and serve while hot, adding a drizzle of sriracha if you like
