Spicy Yogurt Chicken

I like marinating and cooking chicken in yogurt (Greek or regular) as I find it makes the chicken very tender and juicy.   The combination of yogurt with spices and tomato paste gives this a nice kick.  I served the chicken with roasted vegetables topped with the Barefoot Contessa’s Tzatziki, another recipe starring yogurt!

What to buy (serves 2):

  • 2 chicken breasts
  • 2 tablespoons olive oil
  • 1 teaspoon cayenne pepper
  • 2 teaspoons garam masala
  • 2 teaspoons ground cumin
  • 1 teaspoon salt
  • 1 cup plain yogurt
  • 1/4 cup tomato paste

What to do:

  • combine olive oil, spices, tomato paste and yogurt in a  bowl
  • add chicken to mixture, turning to coat
  • cover and refrigerate 4-6 hours
  • place chicken and about 1/2 of the yogurt marinade in a small casserole and bake at 375 degrees for around 45 minutes or until chicken is cooked all the way through and is no longer pink in the middle
  • serve with 1-2 tablespoons of the sauce spooned on top
