Another Monday, another simple and delicious crockpot recipe, this one with pork tenderloin. I made the BBQ sauce on the stovetop but if you’re pressed for time you could combine all the ingredients in your slow cooker and let it work its magic. Truthfully, I’m excited about new wedding presents like the flame orange Le Creuset pot in these pictures and looking for any excuse to use them.
What to buy (serves 4-5):
- 1 tablespoon olive oil
- 3 cloves garlic, minced
- 1 cup ketchup
- 1/3 cup brown sugar
- 2 tablespoons tomato paste
- 2 tablespoons dijon mustard
- 2 dried chipotle peppers
- 4 tablespoons apple cider vinegar
- 1 tablespoon Worcestershire sauce
- 2 tablespoons sriracha
- 1 tablespoon chili powder
- salt and pepper
What to do:
- heat oil in a saucepan over medium-low heat
- add the garlic cook for 5 minutes
- reduce the heat to low and remaining ingredients, stir
- simmer for 20 minutes and taste to add anything it needs like more spice or more sugar
- pour over tenderloins in the crockpot and cook on low for 6-8 hours or high for 3-4 hours, spooning sauce over meat before serving
