Mango Salsa Skillet Chicken

One of my favorite cookbook authors is Sara Foster and while this isn’t one of her recipes,  it reminds me of the simple, healthy food she serves at her restaurant in Durham, NC and writes about in her many cookbooks.    This is a great way to make grilled chicken more exciting;  adding mango to your marinade and salsa gives this dish a sweetness that is matched by the spicy jalapeno and cascabella peppers.  I love how colorful the finished product is! For tips on how to cut a mango you can go here.DSC_0250

What to buy (serves 2):

  • 2 chicken breasts
  • 2 mangoes, one diced for salsa and one reserved for marinade
  • 1 tablespoon brown sugar
  • 1/4 cup cilantro, chopped
  • 1 tablespoon lemon juice
  • 1/2 teaspoon chili pepper
  • 1 tablespoon finely chopped jalapeno
  • salt and pepper to taste
  • 1/3 cup diced red onion
  • 1 tablespoon lime juice
  • 5-6 cascabella peppers, optional

What to do:

  • place fruit of 1 mango, brown sugar, lemon juice, chili pepper, salt and pepper a in a blender and puree well to make your marinade
  • pour mango mixture over chicken and allow to marinate in the fridge for at least 10 minutes or overnight
  • remove from marinade and grill or cook your chicken on the stove top using a cast iron grill skillet as I did here
  • add cascabella peppers to the skillet and allow them to char on each side
  • as you cook, baste the chicken with marinade, cooking until no longer pink in the middle
  • serve chicken with mango salsa and cilantro sprinkled on top

to make salsa:

  • combine remaining mango, jalapeno, onion, lime juice and cilantro, seasoning with salt and pepper to taste
