It is wayyy too hot where I am to turn on the oven these days so the crock pot is my best friend and I’m sharing another crockpot recipe today.
This one was adapted from Crockpot Cheesesteak Pulled Chicken from How Sweet It Is, one of the first food blogs I discovered and am still inspired by. I opted to skip the buns, but go for it if you want more of a sandwich. I used one of my favorite summer beers, Bud Light Lime and added some lime juice to give it a citrus flavor.
What to buy (serves 2):
- 1 green pepper, sliced
- 1 red pepper, sliced
- 1 onion, sliced
- 1 jalapeño, sliced
- 4 garlic cloves, minced or 1 tablespoon garlic paste (I didn’t have any cloves – don’t hate!)
- 1 1/2 pounds boneless, skinless chicken breast cutlets
- 1 teaspoon chili powder
- 1 teaspoon garlic powder
- 1 teaspoon salt
- 1 teaspoon pepper
- 1 beer, your choice
- 2 slices lime
- 2 slices provolone cheese
What to do:
- sprinkle chicken with salt, garlic powder, pepper and chili powder
- layer peppers and onions in the bottom of your crockpot and add garlic
- place chicken on top and then pour in beer
- cover and cook for 6-8 hours on low
- before serving, shred chicken and toss thoroughly to coat, squeeze lime juice on top
- top with provolone slice and serve in buns or as is
