Maple Sriracha Salmon

Joe and I liked my Sriracha Salmon recipe from a few weeks ago so much that I was inspired to combine salmon and sriracha again.  This time I added maple syrup that carmelizes as it cooks with the salmon and a healthy dose of ginger, one of my favorite ingredients.  Here is a quick video for how to peel fresh ginger if you’re new to the ginger root.  You could serve this with a spinach salad, Cheesy Broccoli Chicken Casserole minus the chicken or Baked Summer Squash.

What to buy (serves 2):

  • ¼ cup soy sauce
  • 2 tablespoons sriracha
  • 3 tablespoons maple syrup
  • 1/4 cup fresh ginger, minced (or less depending on how much you like ginger)
  • 2 salmon filets
  • salt and pepper to taste
  • 2 slices of lemon

What to do:

  • combine soy, sriracha, and maple syrup and pour over salmon to let marinate for 30 minutes
  • heat a pan over medium heat and add minced ginger, stirring for 4-5 minutes until it becomes aromatic
  • add salmon and marinade to the pan of ginger and saute for 8-10 minutes until the salmon is just opaque in the center
  • before serving spoon some of syrupy ginger marinade and squeeze some lemon juice on top
