Baked Summer Squash

Now is the time to buy summer squash when it is peak of its season, plentiful and has the best flavor. This is a quick way to prepare squash and is a great addition to any summer meal.

What to buy (serves 4-6 as a side dish):

  • 2 yellow summer squash
  • 2 zucchinis
  • 2-3 tablespoons olive oil
  • 1/3 cup bread crumbs
  • 1/3 cup grated sharp cheddar cheese
  • 1/2 teaspoon salt
  • 1/2 teaspoon pepper
  • 1 teaspoon oregano
  • 1 teaspoon parsley
  • 1 teaspoon rosemary

What to do:

  • preheat oven to 350 degrees
  • remove stem ends and slice squash and zucchini into rounds and toss with olive oil
  • in a separate bowl, combine bread crumbs, cheddar, salt and pepper
  • arrange half the vegetable rounds in bottom of a baking dish and sprinkle with half the bread crumb cheese mixture
  • arrange remaining veggies on top and sprinkle with the rest of the crumb mixture
  • bake in oven for 30-40 minutes until cheese is melted and crumbs are browning
  • top with herbs and serv
