Do you know what edamame means? I had to google it myself but the answer is twig-bean. Now you’ve got that trivia to for the next time you get some sushi.
I love snacking on these twig-beans and I feel good knowing they’re packed with protein, fiber, and micronutrients, especially folates, manganese, and vitamin K. Simple green goodness!
What to buy:
- 12 ounce package unshelled frozen edamame
- 1 tablespoon olive oil
- ¼ cup parmesan cheese, grated
- 1/4 cup pine nuts
- salt and pepper
What to do:
- preheat oven to 400 degrees
- place frozen edamame and pine nuts onto a cookie sheet
- drizzle with olive oil and sprinkle with parmesan, salt and pepper
- bake in oven about 15 minutes, until edamame are warm and cooked throughout
