Roasted Edamame with Pine Nuts and Parmesan

Do you know what edamame means? I had to google it myself but the answer is twig-bean.  Now you’ve got that trivia to for the next time you get some sushi.  IMG_7477

I love snacking on these twig-beans and I feel good knowing they’re packed with  protein, fiber, and micronutrients, especially folates, manganese, and vitamin K.  Simple green goodness!

What to buy:

  • 12 ounce package unshelled frozen edamame
  • 1 tablespoon olive oil
  • ¼ cup parmesan cheese, grated
  • 1/4 cup pine nuts
  • salt and pepper

What to do:

  • preheat oven to 400 degrees
  • place frozen edamame and pine nuts onto a cookie sheet
  • drizzle with olive oil and sprinkle with parmesan, salt and pepper
  • bake in oven about 15 minutes, until edamame are warm and cooked throughout
