Ginger Carrots

Ever bought the large bag of carrots at the grocery store and then spent the rest of the week wondering how you’re going to use them? If so, I’ve got the recipe for you.  This is an easy and delicious way to cook a lot of carrots and the dressing does double time on a salad or as a marinade for chicken or pork tenderloin.

What to buy (serves 4-5):

  • 1 pound carrots, peeled and cut into spears
  • 1/4 to 1/2 cup olive oil
  • 1 tablespoon ginger paste
  • 1 teaspoon cumin
  • 1 teaspoon cinnamon
  • 2 tablespoons red wine vinegar
  • 2 tablespoons dijon mustard
  • 4 tablespoons fresh cilantro, chopped
  • 1 tablespoon lime juice
  • 1/4 teaspoon salt

What to do:

  • add all ingredients except carrots and cilantro into a small bowl and mix until combined
  • pour dressing over carrots, sprinkle with cilantro and bake at 350 degrees for 10-15 minutes until carrots are tender
