Addictive Feta Guacamole

Cat introduced me to the wonders of Cava and their crazy feta dip, an addictive combination of whipped aged barrel feta and jalapeno. This is my take, a marriage of crazy feta and my perfect guacamole.  Serve with pita chips, veggies, bread or just eat with spoon, no judgment.  IMG_5796

What to buy:

  • 6 ounces feta cheese, crumbled (i like trader joe’s version with herbs mixed in)
  • 1 small tomato, diced
  • 1 jalapeno pepper, diced
  • 1/4 cup olive oil
  • 2 cloves garlic, diced
  • juice 1 lemon
  • zest of half a lemon
  • 1 avocado, mashed
  • 1/2 tablespoon paprika

What to do: (makes about 2 cups)

  • in a large bowl combine everything and mash with a fork – up to you what kind of texture you like
  • taste and season with salt and pepper
  • store in the fridge for up to one week, it tastes best after it has been allowed to sit at room temp for about half an hour
