I know, I know, kale chips are so 2012. Maybe I’m even more behind the times than that…but I love kale and recipes that only have 4 ingredients!
You can find ready-made kale chips at Whole Foods or your local equivalent but they’ll cost you a lot more than what you pay for a head of kale.
Squeeze some lemon juice over your chips to brighten the flavor , make things interesting with flavored olive oil or sprinkle on some red pepper flakes to kick up the heat. Enjoy!
What to buy:
- 1 head kale, washed and dried
- 2 tablespoons olive oil
- salt and pepper
What to do:
- preheat the oven to 275
- eemove the ribs from the kale and cut into 1 1/2-inch pieces
- lay on a baking sheet and toss with the olive oil and salt
- bake until crisp, turning the leaves halfway through, about 20 minutes
