Cookie Dough Fudge

IMG_5461The man in my life loves cookie dough.   While I reach for Ben and Jerry’s Phish Food, he is all about the Cookie Dough or Half-Baked.

I don’t stress too much about eating raw eggs in batter or dough but this recipe is a great way to get your cookie dough fix without subjecting youself to salmonella suffering.  I found this recipe idea on Pinterest (where all great indulgent dessert recipes live) and I was inspired by Jam Hands’ recipe here.  The peanut butter chocolate layer take this over the top! Enjoy –

What to buy:

  • 1/2 cup unsalted butter, softened
  • 3/4 cup packed light brown sugar
  • 1 teaspoon vanilla extract
  • 2 cups all purpose flour
  • 1, 14 ounce, can sweetened condensed milk (or make your own recipe here)
  • 1 cup chocolate chips

Peanut-butter layer:

  • 1/2 cup peanut butter, i used crunchy but you can go with whatever you like
  • 1/3 cup chocolate chips

What to do:

  • mix together butter and light brown sugar until light and fluffy
  • add vanilla extract
  • at low speed, alternatingly add  in flour and sweetened condensed milk and mix until combined
  • fold in chocolate chips (i didn’t wait to let the sweetened condensed milk cool so my chocolate started to melt)
  • line pan with parchment or saran wrap so you can remove the fudge after it chills
  • press the cookie dough into the pan
  • combine the peanut butter and chocolate chips in a microwave-safe bowl and heat until smooth
  • cover  bars with topping
  • refrigerate for 3 hours or overnight until firm
  • cut bars into bite-size pieces and flip so the peanut butter is on the top or bottom, whatever you like!
