Blondies {Have More Fun}

blondies: my sisters and me

One of my favorite blondes, my sister, is visiting us this weekend so I wanted to bake something to welcome her: enter blondies.  Blondies resemble the traditional chocolate brownie, but replace the cocoa with brown sugar.  You can make them with or without chocolate chips.  I opted in and went all the way, chopping up some dark and milk chocolate from TJ’s to mix in before I spread them in the pan.

Bars like blondies are faster to make  than cookies and I like how the middle stays gooey as long as you don’t over bake.  Warm and serve this little piece of heaven to your favorite blondes (or brunettes) with ice-cream.

What to buy:

  • 1/2 cup of butter, melted
  • 1 cup of tightly packed dark brown sugar
  • 1 egg
  • 1 teaspoon of vanilla
  • 1/2 teaspoon baking powder
  • 1/8 teaspoon of baking soda
  • Pinch of salt
  • 1 cup of all-purpose flour
  • 1/3 cup of chocolate chips
  • 1 cup chopped milk and dark chocolate – whatever ratio you prefer

What to do:

  • preheat the oven to 350
  • cut out parchment to fit the bottom of your pan (8X8 dish works or a pie dish – as used here)
  • whisk melted butter, egg, vanilla and sugar in a bowl
  • add the flour, baking soda, baking powder, chocolate chips and salt mix it all together
  • add chopped chocolate
  • flatten into the pan, spread evenly
  • bake for 20-25 minutes or until a toothpick comes out clean
