Bell Pepper Chicken CheeseSteaks

 

 

I’ll admit I’m addicted to Pinterest and while it can be a time drain, it is a great source for new recipes.  I discovered this idea on the site.  I changed things around a bit when I realized I didn’t have beef or mushrooms.  Really you can use whatever meat you like.  This is a very filling dish so I didn’t serve with anything else.

What are your favorites recipes or ideas from Pinterest?

To buy:

 

  • 2-3 chicken breasts cut up into bite-sized pieces
  • 8 slices provolone cheese
  • 6 green bell peppers
  • 1 onion, diced
  • 2 tablespoons olive oil
  • 2-3 gloves of garlic, minced
  • salt and pepper to taste

 

Bell Pepper Chicken CheeseSteaks: (serves 3-4)

 

What to do:

 

  • slice peppers in half lengthwise, remove ribs and seeds
  • saute chicken, garlic and onions over medium heat with olive oil until onions are caramelized and chicken is cooked
  • preheat oven to 400*
  • line the inside of each pepper with a slice of provolone cheese
  • fill each pepper with chicken mixture until they are almost overflowing
  • top each pepper with another slice of provolone cheese
  • bake for 15-20 minutes until the cheese on top is golden brown
