Mimosa-Mahi with Roasted Parmesan Chili Beans

Who doesn’t like a mimosa? The favorite brunch cocktail was my inspiration for this Mahi recipe.  I recommend making a mimosa with the extra champagne and citrus while you cook! The spicy and cheesy green beans are a great compliment to the carmelized, sweet fish.

To buy:

  • 3 Mahi  steaks
  • 1 cup orange , peach, mango juice (or just orange)
  •  juice of 2 lemons
  • 1/2 cup gzoya sauce (or could use a teriyaki sauce or soy sauce)
  • 1/2 cup champagne
  • 1/4 cup brown sugar
  • 1 pinch salt

Mimosa-Mahi: (serves 2)

What to do:

  • combine the orange juice and lemon juice,  sugar and salt in a skillet
  • mix well and bring to a boil over medium heat
  • cook until reduced by one half
  • let cool until the glaze is thick and sticky
  • add mahi steaks and cook for 2-3 minutes

Parmesan Chili Beans:

To buy:

  • 1 pound thin green beans
  • olive oil
  •  salt and pepper
  • 1 cup parmesan, grated
  • 1 teaspoon chili powder

What to do:

  • preheat the oven to 400
  • arrange the beans on a nonstick cookie sheet
  • drizzle with olive oil season chili powder and with salt and pepper, to taste
  • sprinkle cheese over the beans and bake until the cheese melts and forms a crisp shell over the beans for about 10 minutes
